Ingredients

For the dipping sauce

  • 1 tsp brown sugar
  • 1 tbsp soy sauce
  • 1 tbsp sesame seed oil
  • 1 tbsp olive oil
  • 1 tsp fish sauce
  • 1 red chilli, chopped with seeds
  • Juice of 1 lime
  • 1 small bunch fresh coriander, finely chopped

For the crispy mince

  • 250 g minced beef
  • 250 g minced pork
  • Salt and black pepper
  • 1 tbsp olive oil
  • 1 red chilli, finely chopped
  • 2 cm fresh ginger, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp sesame seed oil
  • 1 tbsp brown sugar
  • 1 tbsp fish sauce
  • Zest and juice of 1 lime
  • 4 spring onions, sliced

For the lettuce

  • 2 heads baby gem lettuce, leaves separated

Method

For the dipping sauce

  1. Add the brown sugar to a small bowl.

  2. Add the soy sauce, sesame seed oil, olive oil, and fish sauce.

  3. Stir in the chopped red chilli, lime juice, and chopped coriander.

  4. Mix well and adjust seasoning to taste.

For the crispy mince

  1. Mix the minced beef and minced pork together in a bowl, then season generously with salt and black pepper.

  2. Heat a large frying pan over high heat until very hot, then add the olive oil.

  3. Add the seasoned mince to the pan, breaking it up with your hands as it goes in.

  4. Fry the mince, breaking it up further with a wooden spoon, until crisp and deeply browned.

  5. Pour the cooked mince through a sieve set over a bowl to drain away the excess fat.

  6. Wipe out the frying pan and return it to low heat.

  7. Add the sesame seed oil to the pan, then add the finely chopped red chilli, ginger, and garlic.

  8. Fry until fragrant, then sprinkle over the brown sugar and allow it to caramelize slightly.

  9. Return the drained crispy mince to the pan and mix well.

  10. Pour in the fish sauce and toss to coat.

  11. Grate over the lime zest, squeeze in the lime juice, and add the sliced spring onions.

  12. Toss everything together for 30 seconds off the heat, then transfer the mince to a serving platter.

For the lettuce

  1. Arrange the baby gem lettuce leaves around the platter of mince with the dipping sauce alongside.

  2. Spoon the warm crispy mince into a lettuce leaf, drizzle over a little dipping sauce, and serve immediately.
