Natural Pineapple Weed Soda

Ingredients

For the infusion

  • Pineapple weed, thoroughly washed
  • Boiling water

For the fermentation

  • 2 tbsp local honey
  • Apple peel (from 1 apple)

Method

For the infusion

  1. Place the washed pineapple weed into a pot and pour over enough boiling water to cover it.

  2. Allow the pineapple weed to steep in the boiling water until the liquid has completely cooled to room temperature.

For the fermentation

  1. Strain the pineapple weed tea through a fine-mesh sieve and funnel into a large glass jar.

  2. Add the honey into the strained infusion and whisk thoroughly until dissolved.

    The honey provides the necessary sugars for the wild yeast to feed on during fermentation.

  3. Peel an apple and place the fresh apple peels into a clean swing-top glass fermentation bottle.

    Natural wild yeasts live on the skin of the apple, which drives the fermentation process.

  4. Carefully pour the honeyed infusion into the swing-top bottle over the apple peels using a funnel.

  5. Seal the bottle securely, label with the date, and store in a dark place at room temperature to ferment.

    Check the bottle occasionally for pressure buildup and carbonation; it is ready to drink once naturally bubbly and fizzy.
