Ingredients

For the Big Arch sauce

  • 1/2 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tsp yellow mustard
  • 1 tbsp sweet pickle relish
  • 1/4 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp apple cider vinegar
  • 3 pinch cayenne pepper

For the burgers

  • 10 oz ground beef (divided into two 5 oz portions)
  • 1 sesame seed hamburger bun
  • 3 slices American cheese
  • 2 tbsp fried onion rings (Funyuns or crispy onions)
  • Red onion, thinly sliced
  • 3 dill pickle slices
  • Shredded iceberg lettuce

Method

For the Big Arch sauce

  1. In a small bowl, combine mayonnaise, ketchup, yellow mustard, sweet pickle relish, garlic powder, smoked paprika, apple cider vinegar, and cayenne pepper.

  2. Stir until fully blended and smooth.

For the burgers

  1. Place each 5 oz portion of ground beef between sheets of plastic wrap.

  2. Press firmly down using a flat, heavy pot or press until evenly flattened into thin patties.

  3. Toast the sesame seed bun halves in a skillet over medium heat until golden brown.

  4. Place the pre-formed smash patties directly onto a preheated hot skillet or griddle.

  5. Cook until browned on the first side, then flip and immediately lay a slice of cheese on top of each patty.

  6. Spread a generous amount of Big Arch sauce on the toasted bottom bun.

  7. Layer on sliced red onions and fried onion rings.

  8. Add a slice of American cheese on top of the onions.

  9. Stack the melted-cheese smash patties onto the prepared bottom bun.

  10. Top with dill pickle slices, sliced red onions, and more fried onion rings.

  11. Finish with shredded iceberg lettuce, extra sauce on the top bun, and close the burger.
