Nigerian Pancakes

Ingredients

  • 1 large egg
  • 400 ml water
  • 75 ml evaporated milk
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 200 g all purpose flour (about 1 1/2 cups)
  • vegetable oil, for frying

Method

  1. Crack the egg into a bowl and beat it well.

  2. Add about 100 ml of the water and mix into the egg.

  3. Sift the flour into the bowl.

  4. Mix the flour into the liquid, adding another splash of water to loosen the dough.

  5. Stir in all of the evaporated milk and a bit more water until smooth.

  6. Mix in the sugar and salt.

  7. Pour in the remaining water and mix with a hand mixer until completely smooth.

  8. Heat a little vegetable oil in a skillet over high heat.

  9. Turn the heat down to medium, pour in a ladle of batter, and swirl it out to the edges of the pan.

  10. Fry until the underside is deep yellow and golden, about 2 minutes.

  11. Flip and fry the second side until golden brown, about 1 minute more.

  12. Slide the pancake onto a plate and repeat with the remaining batter, adding a little oil each time.
