Kebab Pinwheel Skewers

Ingredients

  • 4 (10- to 12-inch) wooden skewers
  • 1 lb (450 g) 85% lean ground beef
  • 1/2 cup finely chopped yellow onion
  • 2 tbsp chopped parsley
  • 2 tbsp tomato paste
  • 1 tbsp kafta spice blend
  • 3/4 tsp salt
  • 1/2 tsp black pepper, divided
  • 4 large (10-inch) thin pitas

Method

  1. Preheat oven to 475°F (245°C).

  2. Place wooden skewers in a shallow dish, cover with water, and soak until ready to use.

  3. In a large bowl, mix ground beef, onion, parsley, tomato paste, kafta spice, salt, and black pepper until well combined.

  4. Lay pitas on a clean work surface and divide the beef mixture evenly (about 3/4 cup each) among them.

  5. Spread the beef mixture in a very thin, even layer all the way to the edges of each pita.

  6. Roll pitas tightly into logs, pressing gently as you roll to compact the filling.

  7. Chill the logs for cleaner slicing.

  8. Slice each log into 1-inch-thick pinwheels.

  9. Thread 4 to 5 pinwheels onto each skewer with cut sides facing out and pieces touching so they hold their shape.

  10. Spray a baking sheet with cooking spray.

  11. Place skewers cut-side down on the prepared baking sheet and bake until starting to brown, about 6 minutes.

  12. Flip the skewers and continue baking until starting to crisp in spots, about 4 minutes.

  13. Increase oven temperature to broil and continue cooking until edges are browned and crispy in spots, 2 to 4 minutes, turning once halfway through.

  14. Transfer pinwheels to a platter and serve with yogurt sauce.
