Smoked Salmon & Caprese Sandwiches with Garden Salad

Ingredients

For the smoked salmon sandwich

  • 1 baguette
  • 4 tbsp cream cheese
  • 1 tsp lemon zest
  • 200 g smoked salmon
  • 1 tbsp fresh dill
  • 4 lettuce leaves

For the caprese sandwich

  • 1 French loaf
  • 1/2 cup pesto
  • 2 large tomatoes, sliced
  • 200 g fresh mozzarella, sliced
  • 1/2 cup fresh basil leaves
  • 1 pinch salt
  • 1 pinch black pepper

For the garden salad

  • 150 g baby gem lettuce mix
  • 1 cucumber, sliced
  • 4 radishes, sliced
  • 1 avocado, sliced
  • 1 cup cooked chickpeas
  • 2 tbsp mustard
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil

Method

For the smoked salmon sandwich

  1. Slice the baguette lengthwise into equal quarters and split each piece open.

  2. Spread cream cheese evenly over the bottom halves.

  3. Zest fresh lemon directly over the cream cheese layer.

  4. Top with smoked salmon slices, fresh dill, and lettuce.

  5. Close the sandwiches and cut into small individual portions.

For the caprese sandwich

  1. Hollow out the inside of the French loaf halves slightly to make room for fillings.

  2. Spread pesto evenly inside both halves of the bread.

  3. Layer sliced tomatoes, fresh mozzarella, and basil leaves on top.

  4. Season with salt and black pepper, close the loaf, and slice into smaller sandwiches.

For the garden salad

  1. Combine mustard, red wine vinegar, and olive oil in a jar and shake well to make the dressing.

  2. Add lettuce mix, sliced cucumber, radishes, avocado, and chickpeas to a large bowl.

  3. Pour the dressing over the salad and toss gently to combine.
