Ingredients

For the hot honey glaze

  • 1/4 cup honey
  • 1 tbsp lemon juice
  • 1 tbsp harissa paste

For the skewers

  • Red watermelon, cubed
  • Yellow watermelon, cubed
  • Halloumi cheese, cubed
  • Fresh mint leaves, for garnish
  • Wooden skewers

Method

For the hot honey glaze

  1. In a small bowl, combine the honey, lemon juice, and harissa paste.

  2. Stir well to integrate the harissa and honey into a smooth glaze.

For the skewers

  1. Thread alternating cubes of red watermelon, yellow watermelon, and halloumi cheese onto the wooden skewers.

  2. Preheat your outdoor grill to medium-high heat.

  3. Place the assembled skewers directly onto the grill grates.

  4. Grill for 2 minutes per side until light grill marks appear on the watermelon and cheese.

  5. Remove the skewers from the grill and place them on a tray.

  6. Generously brush the hot honey glaze over the warm grilled skewers.

  7. Scatter fresh mint leaves over the skewers and serve immediately.
