Grape Snacks Three Ways

Ingredients

For the grape white chocolate bar

  • 18 Samsons Sorbet grapes, halved
  • 60 g white chocolate chips (about 1/3 cup)
  • Sea salt

For the grape sorbet

  • 6 cups Samsons Sorbet grapes, stems removed
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 1 tsp lemon zest (optional)
  • 2 tbsp finely chopped pistachios, for serving

For the grape cheesecake bites

  • 115 g cream cheese, softened (about 4 oz)
  • 60 g plain Greek yogurt (about 1/4 cup)
  • 2 tbsp honey
  • 1/2 tsp vanilla extract
  • 12 graham cracker squares
  • 1 1/2 cups Samsons Sorbet grapes, chopped
  • 1/4 cup finely chopped pistachios

Method

For the grape white chocolate bar

  1. Line a small baking sheet with parchment paper.

  2. Place the grape halves on the prepared baking sheet in 7 rows of 5.

  3. Add the white chocolate to a microwave-safe bowl and microwave in 30-second intervals, stirring between each, until smooth.

  4. Drizzle the melted white chocolate over the grapes.

  5. Sprinkle immediately with sea salt.

  6. Freeze until the chocolate is firm, about 30 minutes.

For the grape sorbet

  1. Add the grapes, honey, lemon juice, and lemon zest to a blender.

  2. Blend until completely smooth, 1–2 minutes.

  3. Pour the grape mixture onto a parchment-lined quarter sheet pan or 9x13-inch pan.

  4. Spread into an even layer about 1/4-inch thick.

  5. Freeze until completely firm, at least 4 hours.

  6. Scoop into bowls and serve topped with chopped pistachios.

For the grape cheesecake bites

  1. Chop the grapes into small pieces.

  2. Add the softened cream cheese, Greek yogurt, honey, and vanilla extract to a medium bowl.

  3. Beat with an electric hand mixer until smooth and creamy, 1–2 minutes.

  4. Lay out the graham cracker squares on a board or serving plate.

  5. Spread about 1 tablespoon of the cream cheese mixture over each graham cracker square.

  6. Top with the chopped grapes.

  7. Sprinkle with finely chopped pistachios and serve.
