Prime Chuck Cheesesteak

Ingredients

  • 1 lb prime chuck roast, partially frozen
  • 1 large yellow onion, sliced
  • 4 slices American cheese
  • 2 hoagie rolls, split
  • 2 tbsp cooking oil
  • Salt and black pepper, to taste

Method

  1. Freeze the prime chuck roast for 30–60 minutes until firm enough to slice thin.

  2. Slice the chuck roast as thin as possible using a sharp chef's knife.

  3. Heat 1 tablespoon of oil in a large skillet or griddle over medium heat, add the sliced onions, and cook until softened and translucent, 6–8 minutes.

  4. Heat the remaining 1 tablespoon of oil on a high-heat griddle or large skillet, add the thinly sliced beef, and cook while chopping and turning with a spatula until browned, 3–4 minutes.

  5. Mix the cooked onions into the beef and season with salt and pepper.

  6. Top the beef and onion mixture with the American cheese slices and allow to melt, about 1 minute.

  7. Place the split hoagie rolls on top of the cheesy beef mixture, scoop everything up with a large spatula, and wrap in butcher paper to serve.

  8. Using prime grade chuck roast gives a flavor and texture nearly identical to ribeye at half the cost, and is much easier to slice thinly by hand at home.
