Kofta-Inspired Rice Bowls

Ingredients

For the yellow rice

  • 250 g basmati rice
  • 350 g water
  • 1 spoonful chicken bouillon powder
  • 1 pinch turmeric powder
  • 1 pinch aleppo pepper
  • 2 whole cloves

For the dill yogurt sauce

  • 150 g Greek yogurt
  • 50 g mayonnaise
  • 1 splash pickle juice or vinegar
  • 5 g dried dill (about 1 spoonful)
  • 5 g granulated garlic or minced fresh garlic (about 1 spoonful)
  • 3 g black pepper (about 30 cranks)

For the seasoned beef

  • 1 lb (450 g) 93/7 ground beef
  • 4 g salt (about 1 tsp)
  • 1/8 grated onion
  • 1 handful fresh parsley, chopped
  • 5 g ground cumin
  • 2 g ground allspice
  • 2 g ground coriander

For assembling the bowls

  • Shredded lettuce
  • Chopped tomato
  • Pickled red onions
  • Crumble of feta cheese

Method

For the yellow rice

  1. Add the rice, water, chicken bouillon powder, turmeric, aleppo pepper, and whole cloves to a rice cooker.

  2. Stir, cover with the lid, and cook until done, about 25 minutes.

For the dill yogurt sauce

  1. Mix the Greek yogurt, mayonnaise, pickle juice, dried dill, granulated garlic, and black pepper together in a container until smooth.

For the seasoned beef

  1. Heat a pan over high heat until ripping hot.

  2. Add the ground beef and season with the salt, grated onion, chopped parsley, cumin, allspice, and coriander.

  3. Mash and break up the meat as it cooks until browned and fully cooked through, 5–7 minutes.

For assembling the bowls

  1. Divide the cooked yellow rice and seasoned beef into serving bowls.

  2. Top with shredded lettuce, chopped tomato, pickled red onions, and crumbled feta.

  3. Add a large spoonful of the dill yogurt sauce over top before serving.
