Seasoned Ground Beef & Yellow Rice Bowl

Ingredients

For the yellow rice

  • 180 g white rice
  • 250 g water
  • 5 g chicken bouillon powder
  • 1 g dried oregano
  • 1 g turmeric powder
  • 1 clove garlic, crushed

For the dill yogurt sauce

  • 150 g low-fat sour cream
  • 50 g mayonnaise
  • 50 g water
  • 4 g dried dill
  • a splash white vinegar

For the beef

  • 225 g 93/7 ground beef
  • salt
  • aleppo pepper
  • dried minced garlic

For assembly

  • pickled red onions
  • cilantro stems, finely chopped

Method

For the yellow rice

  1. Put the white rice, water, chicken bouillon powder, dried oregano, turmeric powder, and crushed garlic into a rice cooker and stir to combine.

  2. Cover and turn the rice cooker on.

For the dill yogurt sauce

  1. In a small jar, combine the low-fat sour cream, mayonnaise, water, dried dill, and vinegar, then stir until smooth.

For the beef

  1. Heat a griddle or heavy skillet over high heat.

  2. Place the ground beef onto the hot griddle and press it flat with a spatula to maximize browning.

  3. Season the beef with a sprinkle of salt, aleppo pepper, and dried minced garlic.

  4. Break up the beef into small pieces using the spatula and cook until browned through, about 4 minutes.

For assembly

  1. Divide the yellow rice between two bowls.

  2. Top with the cooked beef.

  3. Drizzle each bowl with 15–20 g of the dill yogurt sauce.

  4. Finish with pickled red onions and chopped cilantro stems.
