Pork Ribs with Zucchini (Carnita De Puerco Con Calabazas)

Ingredients

  • 2 kg pork rib ribs, chopped into small pieces
  • Water, enough to submerge the meat
  • Salt, to taste
  • 1 tbsp pork lard
  • 1 kg zucchini, diced
  • 3 garlic cloves, minced
  • 1 onion, diced
  • 2 serrano chiles, finely chopped
  • 5 plum tomatoes, chopped
  • 1 small bunch fresh cilantro, chopped

Method

  1. Place the pork ribs in a pan with water to cover and a pinch of salt. Cook over medium heat until the water evaporates and the meat is tender, about 25 minutes.

  2. While the meat cooks, chop the zucchini, garlic, onion, serrano chiles, and tomatoes.

  3. Once the water has evaporated from the meat, add the lard to the pan and fry the meat until lightly browned, about 5 minutes.

  4. Add the minced garlic and chopped onion to the browned meat; stir and cook for 2 minutes until fragrant.

  5. Stir in the diced zucchini and a little salt. Cook for 5 minutes, stirring occasionally, until slightly softened.

  6. Add the chopped tomatoes, serrano chiles, and fresh cilantro. Mix well to combine all ingredients.

  7. Cover and simmer over low heat for 5 minutes to allow the flavors to blend.

  8. Remove from heat and serve hot, accompanied by boiled or fried beans.
