Ingredients
Mix together the oats, flour, brown sugar, salt, and cinnamon in a large bowl.
Drizzle in the melted butter.
Mix with a spatula until the liquid is absorbed, then use your hands to work it into a crumble mixture.
Dump half of the crumble mixture into a baking slab or baking dish.
Press the crumble into an even layer on the bottom to form the crust.
Use a flat-bottomed measuring cup to press the crust down evenly.
Set the remaining crumble and the crust aside.
Evenly scatter the chopped rhubarb over the crust.
In a small saucepan, whisk together the sugar, cornstarch, lemon zest, water, and vanilla extract.
Cook over medium heat, whisking constantly, until the mixture becomes thick and clear.
Pour the warm cornstarch mixture evenly over the rhubarb, and spread with a spatula if needed.
Scatter the remaining crumble mixture evenly over the top.
Preheat your oven to 350°F (175°C) with a rack in the center.
Bake the rhubarb bars until the filling is bubbling and the crumble top is golden brown, about 1 hour.

Remove from the oven and let cool completely before slicing and serving.
