Shahi Roasted Channa Sattu Modak

Ingredients

For the cashew almond mixture

  • 1/4 cup cashews
  • 1/4 cup almonds
  • 1/2 cup sugar
  • 2 cardamom pods

For the sattu dough

  • 1 cup roasted chickpeas (chana sattu)
  • 1/4 cup desiccated coconut
  • 1/4 cup milk powder
  • warm milk, as needed
  • 1 tsp desi ghee

For the filling

  • raisins, finely chopped
  • pistachios, finely chopped

To assemble the modaks

    For garnishing (optional)

    • pistachios, chopped
    • dried rose petals
    • edible silver leaf (vark)

    Method

    For the cashew almond mixture

    1. Add the cashews, almonds, sugar, and cardamom pods to a grinding jar. Video: 01:10

    2. Pulse in short bursts until finely powdered. Video: 01:21

      Do not run the grinder continuously, as nuts will release oil and turn sticky.

    3. Transfer the ground mixture to a large bowl or platter. Video: 01:57

    For the sattu dough

    1. Grind the roasted chickpeas in a mixer jar into a fine powder. Video: 02:29

    2. Add the roasted chickpea powder to the bowl containing the cashew almond mixture. Video: 02:38

    3. Add the desiccated coconut and milk powder to the mixture and combine thoroughly. Video: 03:07

    4. Gradually pour in warm milk while kneading the ingredients into a smooth dough. Video: 03:45

    5. Add 1 tsp of desi ghee to the dough and knead until pliable. Video: 03:56

    For the filling

    1. In a small bowl, combine chopped raisins and pistachios to make the filling. Video: 04:40

    To assemble the modaks

    1. Grease a modak mold with a little ghee. Video: 05:08

    2. Optionally, place a few chopped pistachios and dried rose petals inside the mold for decoration. Video: 05:12

    3. Press a portion of dough into both sides of the mold, then close it securely. Video: 05:19

    4. Make a small cavity in the center from the bottom opening and insert a pinch of the raisin-pistachio filling. Video: 05:33

    5. Seal the bottom with a small piece of dough and level it smooth. Video: 05:41

    6. Carefully open the mold to release the shaped modak. Video: 05:48

    7. Repeat the process for the remaining dough and filling to form all modaks. Video: 06:35

    8. Decorate the modaks with edible silver leaf if desired before serving. Video: 06:31
