Ingredients

  • 1 tbsp + 2 tbsp ghee (clarified butter)
  • 1 cup skimmed milk powder
  • 1/2 cup milk
  • 1/2 tsp cardamom powder
  • 1/2 cup tagar (bura / powdered sugar), plus extra for coating

Method

  1. Heat 1 tbsp ghee in a non-stick pan over low heat.

  2. Add the milk powder and roast over low heat, stirring continuously, adding the remaining 2 tbsp ghee gradually in small batches, until it turns a deep golden brown.

  3. Pour in the milk and cook, stirring constantly, until the mixture becomes smooth and soft.

  4. Stir in the cardamom powder and mix well.

  5. Transfer the mixture to a wide plate and let it cool slightly until safe to touch.

  6. Add 1/2 cup tagar (bura) and mix thoroughly into the dough-like mixture using your hands.

  7. Pinch small ball-sized portions of the mixture and shape them into rustic, traditional pedes with your hands.

  8. Coat each pede lightly with additional tagar (bura) before serving.
