Ingredients

For the base

  • 1/4 cup cashews
  • 1/4 cup sugar
  • 200 g paneer, crumbled
  • 1/2 cup milk powder
  • 2 tbsp malai (fresh cream)

For the rose filling

  • 2 tbsp desiccated coconut
  • 1 tbsp rock sugar (mishri)
  • 1 tbsp pistachios, chopped
  • 1/2 tsp rose syrup or rose essence

For the assembly

    For garnishing

    • Desiccated coconut
    • Chopped pistachios
    • Dried rose petals

    Method

    For the base

    1. Add the cashews and sugar to a blender jar, then grind on pulse mode to a fine powder.

    2. Add the crumbled paneer, milk powder, and malai to the jar, then blend into a smooth mixture.

    3. Transfer the mixture to a plate, then remove 2 tablespoons of it into a separate bowl for the filling.

    4. Chill the remaining paneer base in the refrigerator until set, about 5 minutes.

    For the rose filling

    1. To the bowl with the reserved paneer mixture, add the desiccated coconut, rock sugar, chopped pistachios, and rose syrup.

    2. Mix everything well until combined into a uniform pink mixture.

    3. Shape the filling into small round balls.

    For the assembly

    1. Lightly grease a modak mould with oil or ghee.

    2. Press a layer of the chilled white paneer dough inside the walls of the mould.

    3. Place a rose filling ball inside the center cavity.

    4. Cover the bottom with more white dough and press firmly to seal.

    5. Unmould the modak carefully.

    6. Garnish with coconut, chopped pistachios, and dried rose petals before serving.
