No-Cook Shahi Modak

Ingredients

For the dough

  • 1/2 cup cashews
  • 1/2 cup almonds
  • 1/2 cup sugar
  • 4 cardamom pods
  • 1 cup roasted chana (chana dal)
  • 2 tbsp desiccated coconut
  • 2 tbsp milk powder
  • 3–4 tbsp warm milk

For the filling

  • 2 tbsp raisins, chopped
  • 1 tbsp pistachios, finely chopped

For shaping

  • Rose petals, chopped
  • Pistachios, finely chopped

Method

For the dough

  1. Put the cashews, almonds, sugar, and cardamom into a grinder jar and grind to a fine powder using pulse mode.

  2. Transfer the ground cashew mixture to a large bowl or plate.

  3. Put the roasted chana into the grinder jar and grind to a fine powder.

  4. Add the ground chana, desiccated coconut, and milk powder to the bowl with the cashew mixture.

  5. Pour in warm milk a little at a time and mix by hand until a soft, smooth dough forms.

For the filling

  1. Mix the chopped raisins and chopped pistachios together in a small bowl.

For shaping

  1. Grease the modak mold lightly and sprinkle rose petals and chopped pistachios inside.

  2. Press a portion of the dough into the mold, pressing against the sides to leave a hollow center.

  3. Fill the cavity with a portion of the raisin filling.

  4. Seal the bottom with a small piece of dough and open the mold carefully to reveal the modak.

  5. Repeat with the remaining dough and filling to form all the modaks.
