Veggie Besan Toast

Ingredients

For the batter

  • 1 cup gram flour (besan)
  • 1/4 cup all-purpose flour (maida)
  • 1 tbsp corn flour
  • 1 tsp salt
  • 1/2 tsp black pepper powder
  • red chilli flakes
  • coriander leaves, finely chopped
  • 1/2 tsp baking powder
  • water

For the toast

  • butter
  • 2 slices sandwich bread
  • cheese slices, halved diagonally
  • process cheese cubes
  • 1 onion, sliced
  • 1 tomato, sliced
  • pizza seasoning
  • red chilli flakes

- tomato sauce

  • fresh coriander, chopped

Method

For the batter

  1. Add 1 cup gram flour to a bowl.

  2. Add 1/4 cup all-purpose flour.

  3. Add 1 tbsp corn flour.

  4. Add 1 tsp salt, 1/2 tsp black pepper powder, red chilli flakes, finely chopped coriander leaves, and 1/2 tsp baking powder.

  5. Mix the dry ingredients together.

  6. Gradually add water while whisking to make a thin, runny batter.

    The consistency should be like buttermilk or beaten eggs.

For the toast

  1. Cut 2 slices of sandwich bread into 4 triangles each.

  2. Heat a little butter in a pan over medium heat.

  3. Arrange 4 bread triangles in the pan in a square pattern with the points meeting in the center.

  4. Pour the batter around the sides and into the gaps between the bread slices.

  5. Add a little more butter or ghee around the edges and cook for a few seconds until set on the bottom.

  6. Flip the toast over.

  7. Place a cheese slice or process cheese cubes onto each triangle half.

  8. Add tomato and onion slices over one half of the toast.

  9. Sprinkle with pizza seasoning, red chilli flakes, tomato sauce, and fresh coriander.

  10. Fold the un-vegetable side over the vegetable side to close the sandwich.

  11. Cut through the middle to separate into two servings.

  12. Serve immediately with tomato ketchup or schezwan sauce.
