Ingredients
Mix the chili powder, dried oregano, white sugar, cumin, smoked paprika, seasoned salt, garlic powder, cayenne pepper, basil, and black pepper together in a small bowl.
Fry the bacon slices in a skillet until crisp.
Remove the bacon and drain on a paper towel lined plate.
Add the red bell pepper, green bell pepper, celery, jalapeno, and onion to the bacon grease in the skillet and saute until tender, about 5 minutes over medium heat.
Remove the vegetables from the pan, draining off the bacon grease.
Break 1 pound of ground beef into chunks and brown in the skillet using the remaining grease.
Remove the first batch of ground beef from the pan and repeat with the second pound.
Pour the beef consomme and tomato paste into the slow cooker and stir together.
Add the Worcestershire sauce and the spice mix, then stir thoroughly to combine.
Pour in the diced tomatoes with their juice, the chili beans, and the kidney beans.
Chop the cooked bacon into pieces and add to the slow cooker.
Add the ground beef and sauteed vegetables to the crockpot and stir to mix everything together.
Cover and cook on low for 6 hours.
Serve in bowls with corn chips, sour cream, cheddar cheese, jalapeño, green onion, and cilantro.
