Ingredients
In a stand mixer bowl, mix the eggs, milk, sugar, and yeast.
Add the bread flour and dough conditioner.
Mix briefly to bring the dough together.
Add the softened butter and salt.
Knead in the stand mixer until smooth and elastic, about 10 minutes.
Shape the dough into a smooth ball and place into a greased bowl.
Cover and let rise until doubled in size, 1–1.5 hours.

Turn the dough out and divide into 8 equal portions, about 95 g each.
Tuck and fold each portion into a tight ball, rolling against the counter to create tension on top.
Place the balls onto a lined baking sheet and flatten them slightly.
Cover and let rise a second time, about 45 minutes.

Preheat the oven to 375°F (190°C).
Whisk the egg yolk with a splash of water and brush over the risen dough balls.
Sprinkle the tops with sesame seeds.
Bake until golden brown, about 20 minutes.

Let cool slightly on the tray before serving.
