Ingredients

  • 1 3-bone rack beef short ribs (dino ribs)
  • hot sauce, as a binder
  • salt, pepper, and garlic rub (SPG)

Method

  1. Light an offset smoker with post oak wood and bring to 275°F (135°C).

  2. Apply a thin layer of hot sauce all over the rack of beef ribs to help the seasoning stick.

  3. Season the ribs generously on all sides with the salt, pepper, and garlic rub.

  4. Place the ribs on the smoker and cook at 275°F (135°C) until tender, probing around 200°F (93°C) internally with no resistance.

    It is done by feel rather than exact temperature — the probe should slide in like soft butter.

  5. Remove the ribs from the smoker, wrap in foil, and allow to rest before slicing.

    Then 30 min of waiting

  6. Slice between the bones and serve immediately.

  7. Retaining the fat cap on top helps develop a thick, dark bark during the long smoke.
