Mala Beef (Over Rice)

Ingredients

For the beef

  • 500 g beef loin (picanha or sirloin), thinly sliced (about 3 mm thick)
  • 2 tsp Sichuan peppercorn powder
  • 2 tsp red chili powder (gochugaru or Kashmiri)
  • 1/2 tsp salt
  • 1/4 tsp chicken bouillon powder
  • 1/4 tsp white pepper
  • 1/4 tsp dark soy sauce
  • 1 tbsp light soy sauce
  • 1 tbsp dark brown sugar
  • 10 g dried red chilies, cut into sections
  • 2 inches fresh ginger, sliced
  • 3 scallions, white parts only, cut into 1-inch lengths
  • 1 tbsp vegetable oil

For cooking

  • 1/2 cup vegetable oil
  • 2 star anise
  • 1 Chinese black cardamom (tsao ko)
  • 2 tsp toasted sesame seeds
  • 1/4 tsp MSG
  • 2 tbsp chili flakes

Method

For the beef

  1. If using whole Sichuan peppercorns, toast them in a dry pan over medium-low heat for 2 minutes, then grind to a powder.

  2. Combine the beef slices, Sichuan peppercorn powder, red chili powder, salt, chicken bouillon powder, white pepper, dark soy sauce, light soy sauce, dark brown sugar, dried chilies, sliced ginger, and scallion whites in a large bowl.

  3. Add 1 tbsp oil, toss well to coat, cover, and chill in the refrigerator to marinate.

For cooking

  1. Heat 1/2 cup of oil in a wok over medium-high heat with the star anise and black cardamom until the spices begin to bubble, about 280°F (140°C).

  2. Add the marinated beef mixture to the wok.

  3. Fry the beef in the oil until the beef dries slightly and the oil turns clear again, about 5 minutes.

  4. Strain the beef, reserving the cooking oil, and transfer the fried beef to a mixing bowl.

  5. Sprinkle the toasted sesame seeds and MSG over the beef in the bowl.

  6. Return the cooking oil to the wok and heat until it reaches 320°F (160°C).

  7. Turn off the heat, stir the chili flakes into the hot oil, then pour the hot chili oil immediately over the beef in the bowl.

  8. Toss the beef well to combine with the oil and spices, then transfer to a serving bowl.
