Mauby Lemonade

Ingredients

For the mauby syrup

  • 5 cups water
  • 4 pieces mauby bark
  • 1 star anise
  • 1 inch cinnamon stick, broken into pieces
  • 3 small bay leaves (or 1 large bay leaf)
  • 1 piece dried orange peel
  • 3 orange slices
  • 1 cup white sugar

For assembly

  • 1 cup freshly squeezed lemon juice
  • 5 cups water
  • Ice, mint leaves, and lemon slices (for serving)

Method

For the mauby syrup

  1. Add 5 cups of water to a saucepan along with the mauby bark, star anise, cinnamon stick, bay leaves, dried orange peel, and orange slices.

  2. Add the white sugar to the pot.

  3. Turn on the stove, bring the mixture to a boil, and reduce to a simmer.

  4. Stir with a whisk to dissolve the sugar, gently pressing down on the orange slices to release their flavor.

  5. Simmer for 10 minutes, then turn off the heat and allow the mixture to cool completely to room temperature.

For assembly

  1. Strain the cooled mauby syrup into a large container or bowl to remove the solids.

  2. Add 1 cup of freshly squeezed lemon juice and 5 cups of water to the strained syrup.

  3. Whisk thoroughly to combine all ingredients.

  4. Serve chilled over ice, garnished with fresh mint leaves and lemon slices.
