Honey Garlic Braised Pork Ribs with Potatoes

Ingredients

For the sauteed potatoes

  • 3 medium potatoes, diced
  • 1 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp mixed dried herbs
  • 1 large carrot, sliced
  • 1 medium onion, chopped
  • 2 spring onions, sliced

For the braised pork ribs

  • 1 kg pork ribs
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 4 cloves garlic, minced
  • 1 cup water or broth
  • 2 spring onions, sliced

Method

For the sauteed potatoes

  1. Melt the butter in a pan over medium heat.

  2. Add the potatoes, carrots, and onions, and season with salt, black pepper, and dried herbs.

  3. Cook, stirring occasionally, until the potatoes and carrots are tender and golden brown, about 15–20 minutes.

  4. Stir in the sliced spring onions just before taking off the heat.

For the braised pork ribs

  1. In a wide pan, combine the pork ribs, soy sauce, honey, minced garlic, and water or broth.

  2. Bring to a boil, then reduce the heat, cover, and let simmer until the pork is tender, about 30–40 minutes.

  3. Skim off any excess fat from the top of the sauce with a spoon.

    Do not pour rendered grease down the sink as it will clog the pipes; dispose of it in a jar or container instead.

  4. Continue to simmer uncovered until the sauce thickens and coats the ribs, about 5 minutes.

  5. Garnish with sliced spring onions before serving alongside the sauteed potatoes.
