Easy Crab Apple Chow

Ingredients

  • Fresh crab apples
  • Handful fresh shadon beni (culantro), chopped
  • 1 scotch bonnet pepper, chopped
  • 3-4 whole wiri wiri peppers
  • 5-6 cloves garlic, smashed
  • 4-5 sweet salted prunes
  • 1-2 shallots, thinly sliced
  • Pinch of sea salt
  • Juice of 1/2 lime
  • Juice of 1 lemon
  • Dash of black pepper
  • Water

Method

  1. Pick and wash the fresh shadon beni (culantro) and peppers.

  2. Trim any blemishes off the crab apples and make several shallow cuts around each one to allow the brine to penetrate.

  3. Place the crab apples into a large mixing bowl.

  4. Add the chopped shadon beni, whole wiri wiri peppers, smashed garlic cloves, chopped scotch bonnet, sweet salted prunes, and sliced shallots.

  5. Sprinkle with sea salt, then pour over the lime juice and lemon juice.

  6. Toss everything together thoroughly to coat all the ingredients in the seasonings and juices.

  7. Transfer the mixture into clean glass jars, top up with water until covered, and seal tight.

  8. Refrigerate and allow to marinate before serving.
