Ingredients

For the sada roti

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup warm water

For the bhaji

  • 1 lb spinach, chopped
  • 1/2 cup coconut milk
  • 2 Scotch bonnet peppers, sliced
  • 1 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1/2 tsp salt

For the sada roti

    Method

    For the sada roti

    1. Knead the flour, baking powder, salt, and warm water into a smooth dough ball in a large bowl, cover with a damp towel, and let rest.

      Then 15 min of waiting

    For the bhaji

    1. Add the chopped spinach, sliced Scotch bonnet peppers, coconut milk, oil, minced garlic, and salt to a large pan over medium heat.

    2. Stir and cook until the spinach is wilted and tender, 8–10 minutes.

      Then 8 min of waiting

    For the sada roti

    1. Divide the rested dough into balls, roll out into flat disks, and cook on a hot tawa or griddle until puffed and lightly browned on both sides, 2–3 minutes per side.

    2. Serve the warm bhaji alongside the fresh sada roti and lime pepper sauce.
