Season the chicken thighs with salt, pepper, garlic powder, and Italian seasoning on both sides.
Heat olive oil in a large cast-iron skillet over medium-high heat.
Sear the chicken thighs until golden brown and cooked through, about 5–7 minutes per side.

In the same skillet, melt the butter over medium heat.
Add the diced onion and minced garlic, sauteing until soft and fragrant, 2–3 minutes.
Add the sliced mushrooms and sun-dried tomatoes, cooking until mushrooms are softened, 4–5 minutes.
Pour in the heavy cream and chicken broth, bringing the mixture to a gentle simmer.
Stir in the grated Parmesan cheese until melted and smooth, about 2 minutes.
Stir in the chopped spinach and cook until wilted, about 1–2 minutes.
Return the seared chicken thighs to the skillet, spooning the sauce over them.
Simmer together for 2–3 minutes until the chicken is heated through and the sauce thickens.
