Steak Breakfast Burrito

Ingredients

For the filling

  • 2 sirloin steaks, heavily seasoned with salt
  • 2 bell peppers (1 red, 1 green), sliced into strips
  • 4 large eggs, beaten
  • 1 cup sweet potato fries, cooked
  • 1 avocado, sliced

For assembling

  • 2 large flour tortillas
  • Salsa verde

Method

For the filling

  1. Heat a pan over medium-high heat and sear the sirloin steaks to your desired doneness.

  2. Remove the steaks from the pan and leave them to rest on a board.

  3. In the same pan, cook the sliced red and green bell peppers until softened, about 3 to 4 minutes.

  4. Pour the beaten eggs into the pan and scramble them to your liking.

  5. Slice the rested sirloin steak into thin strips.

For assembling

  1. Lay out a large tortilla on a cutting board.

  2. Layer sliced steak, scrambled eggs, cooked peppers, sliced avocado, sweet potato fries, and a drizzle of salsa verde down the center.

  3. Wrap the burrito tightly by folding in the sides and rolling it up, then wrap in foil.

  4. Toast the wrapped burrito in a dry pan until warmed through and crisp on the outside, about 2 minutes per side.

  5. Slice in half and serve immediately.
