Vegetarian Lentil Burgers

Ingredients

  • 2 1/2 cups cooked brown lentils, divided
  • 2 tbsp tomato paste
  • 1 tsp minced garlic
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/2 cup grated carrots
  • 1/4 cup minced onion
  • 1/4 cup flour
  • Non-stick cooking spray
  • 4 hamburger buns
  • Desired burger toppings (lettuce, tomato, ketchup, mustard, pickles)

Method

  1. Preheat oven to 400°F (200°C).

  2. Add 1 1/4 cups of cooked lentils, tomato paste, minced garlic, paprika, salt, black pepper, and cumin to a food processor.

  3. Blend and scrape down the sides until a smooth paste forms.

  4. Transfer the lentil puree to a large bowl.

  5. Add the remaining 1 1/4 cups of cooked lentils, grated carrots, minced onion, and flour to the bowl.

  6. Fold everything together until well combined.

  7. Spray a parchment-lined baking sheet with non-stick spray.

  8. Divide the lentil mixture into 4 equal portions and shape them into firm, compact patties.

  9. Place the patties onto the prepared baking sheet.

  10. Bake in the preheated oven for 10 minutes.

  11. Flip the patties over and bake for another 10 minutes until heated through and firm.

  12. Assemble the lentil burgers on buns with your desired toppings and serve immediately.
