Ingredients
Slide a dull knife under the membrane on the bone side of the ribs, grasp it with a paper towel, and peel the membrane off both slabs.
Cut each rack of ribs in half.
Mix the salt, garlic powder, and black pepper together in a small bowl.
Season all four rib sections generously on all sides with the spice mixture.
Place the seasoned ribs on a wire rack over a baking sheet and refrigerate to dry brine, at least 2 hours or up to 18 hours.

Preheat the oven to 275°F (135°C).
Double-wrap each rib section tightly in aluminum foil, with the bone side facing up.
Place the foil packets on a baking sheet and cook in the oven for 3 hours.

Remove the ribs from the oven and rest them wrapped in foil for 20 minutes.

Heat a splash of neutral oil in a small saucepan over medium heat.
Add the grated onion and minced garlic to the saucepan.
Cook, stirring occasionally, until the onion is soft and translucent, about 3 minutes.

Add the ketchup, molasses, Worcestershire sauce, hot sauce, apple cider vinegar, yellow mustard, chili powder, and cayenne pepper to the pan.
Stir to combine and simmer gently over medium-low heat until reduced by about 20%, 5–10 minutes.

Place the pan lid partially on to minimize popping and splattering as the sauce thickens.
Preheat an outdoor grill to high heat and coat the grates with cooking spray.
Lightly spray the ribs with cooking spray and place them meat-side down on the hot grill.
Grill the ribs for 2 minutes to char the surface.

Flip the ribs, brush the top generously with the BBQ sauce, close the lid, and cook for 60–90 seconds.
Then 1 min of waiting
Flip the ribs again, brush the back side with BBQ sauce, and grill for another 60–90 seconds.

Flip back to the meat side, apply one last generous layer of sauce, and close the lid to glaze for 1–2 minutes.

Remove the ribs from the grill and let them sit for 2 minutes.

Brush with a final layer of sauce, then flip the ribs upside down to cut between the bones.
