Ingredients

For the chili

  • 1 Spanish onion, diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 1 lb ground beef (ground chuck or round)
  • 2 tbsp chili powder
  • 1/2 tsp white pepper
  • 1/2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 can (14 oz) crushed tomatoes
  • 1 can (15 oz) kidney beans, drained
  • 1 tsp adobo sauce
  • Salt to taste

For the eggscellent omelette

  • 12 large eggs
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 cup sautéed vegetables (onions, peppers, mushrooms)
  • 1 cup shredded cheddar cheese
  • Fresh fruit (for serving)
  • Biscuits (for serving)

Method

For the chili

  1. Heat a large pot over medium-high heat and brown the ground beef until cooked through, about 5–7 minutes.

  2. Drain off most of the beef fat, leaving a small amount in the pan.

  3. Add the diced onion and green pepper to the pot and sweat until softened, about 4–5 minutes.

  4. Stir in the minced garlic, chili powder, white pepper, cumin, smoked paprika, and dried oregano.

  5. Pour in the crushed tomatoes, kidney beans, adobo sauce, and about 1 to 1 1/2 cans of water.

  6. Bring to a simmer, then reduce heat to medium-low and cook, stirring occasionally, for about 1 hour until thick.

For the eggscellent omelette

  1. In a large skillet or cast-iron pan, heat the olive oil and butter over medium heat.

  2. Crack the 12 eggs into a large bowl and beat them thoroughly with a fork or whisk.

  3. Pour the beaten eggs into the heated pan and move them constantly with a fork until soft curds begin to form, about 2 minutes.

  4. Dump the sautéed vegetable fillings onto one half of the egg mixture.

  5. Fold the omelette closed over the fillings using a spatula and slide it onto a large serving platter.

  6. Top the giant omelette generously with the prepared warm chili and shredded cheddar cheese.

  7. Serve alongside fresh fruit and biscuits.
