Pork Carnitas Tacos

Ingredients

  • 4 lb pork shoulder, cut into 2-inch pieces
  • Kosher salt
  • 2 lb lard
  • 1 orange, juiced and halved
  • 1/2 yellow onion
  • 12 oz Coca-Cola
  • 4 garlic cloves, peeled
  • 2 to 4 bay leaves
  • 1 tsp toasted cumin seeds
  • 1 tbsp dried oregano
  • 5 oz evaporated milk

Method

  1. Season the pork shoulder pieces generously with kosher salt.

  2. In a large Dutch oven, combine the lard, orange juice and squeezed orange halves, yellow onion half, Coca-Cola, garlic cloves, bay leaves, cumin seeds, and dried oregano.

  3. Cover the Dutch oven and bring the mixture to a simmer over high heat.

  4. Add the pork shoulder pieces to the simmering pot, bringing the mixture back up to a bare simmer.

  5. Pre-heat the oven to 300°F (150°C).

  6. Transfer the uncovered pot to the oven and braise for 1 hour 30 minutes, stirring every 30 minutes.

  7. Stir in the evaporated milk and return the pot to the oven for another 1 hour 30 minutes until the pork is tender.

  8. Remove the pork from the liquid and shred it using two forks.

  9. Broil the shredded carnitas on a baking sheet under a medium broiler until browned and crisp, 5–10 minutes.
