Ingredients
In a microwave-safe mug, whisk together the flour and baking soda with a fork.
Whisk in the egg, milk, oil, and maple syrup until smooth.
Gently stir in the blueberries.
Microwave for 1 minute at 1200W until puffed and cooked through.
Top with additional blueberries and a drizzle of maple syrup.
Place the cubed sweet potato into a microwave-safe mug and cover with cold water.
Microwave for 2–3 minutes at 1200W until the sweet potato is bright orange and tender.

Drain the water thoroughly from the mug.
Stir in the peppers, red onion, rosemary, cheese, butter, salt, and pepper.
Microwave for 1 minute at 1200W until the vegetables soften and the cheese melts.
Top with extra chopped rosemary and a fresh rosemary sprig.
In a microwave-safe mug, combine the oats, water, milk, and peanut butter.
Microwave for 1–2 minutes at 1200W, pausing halfway to stir so it does not boil over.
Top with chopped peanuts and a spoonful of jam.
Mash the half banana inside a microwave-safe mug using a fork.
Stir in the flour, cinnamon, baking powder, salt, milk, and maple syrup until a thick batter forms.
Fold in the raisins, leaving a few to sprinkle on top.
Microwave for 1 minute at 1200W until risen and firm.
Do not overcook mug muffins or they will become rubbery.
Garnish with fresh banana slices and a light dusting of cinnamon.
Crack the eggs into a large microwave-safe mug.
Add the salt, pepper, scallions, parsley, and milk, then whisk well with a fork.
Microwave for 1–1 1/2 minutes at 1200W, stopping once or twice to stir gently so the eggs cook evenly.
Top with additional chopped scallions and fresh parsley.
