Gochugaru and Sesame Beef Jerky

Ingredients

  • 1 kg lean beef (eye of round, top round, or flank steak)
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 125 ml soy sauce (1/2 cup)
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • 2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp gochugaru
  • White sesame seeds
  • Ground pepper leaf

Method

  1. Trim the fat off the beef, then freeze until firm, 1–2 hours.

  2. Slice the beef thinly against the grain, about 5 mm thick.

  3. In a large bowl, combine the onion powder, garlic powder, soy sauce, Worcestershire sauce, brown sugar, black pepper, smoked paprika, and gochugaru.

  4. Add the sliced beef to the marinade and mix thoroughly with clean hands to coat every piece.

  5. Cover the bowl and refrigerate for 2 days, mixing the beef twice a day while it marinates.

  6. Remove the beef pieces from the marinade and lay them flat on dehydrator trays without overlapping.

  7. Pat the meat dry with paper towels.

  8. Sprinkle evenly with white sesame seeds and ground pepper leaf.

  9. Dehydrate at 140°F (60°C) for 4–6 hours until firm yet bendable.
