Ingredients

For the kimchi mayo

  • 1/2 cup mayonnaise
  • 1/4 cup kimchi, roughly chopped
  • 1 tbsp gochujang
  • To assemble
  • 2 brioche burger buns, split and toasted
  • 2 slices cheese (such as Monterey Jack or American)
  • Butter lettuce leaves
  • Tomato slices

For the patties

  • 1/2 onion, finely chopped
  • 1 clove garlic, finely grated
  • 1 tsp ginger, finely grated
  • 400 g ground beef
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • Salt and black pepper

To assemble

    Method

    For the kimchi mayo

    1. Combine the mayonnaise, chopped kimchi, and gochujang in a tall jug or blender vessel.

    2. Blend using an immersion blender until smooth and creamy.

    For the patties

    1. In a bowl, combine the chopped onion, grated garlic, and grated ginger.

    2. Add the ground beef, soy sauce, sesame oil, sugar, salt, and black pepper.

    3. Mix the ingredients together thoroughly until well combined.

    4. Shape the mixture into two large, thin burger patties.

    5. Cook the patties over high heat on a grill or in a hot skillet for 2–3 minutes per side until nicely browned.

    6. Top each patty with a slice of cheese during the last minute of cooking, covering to melt if needed.

    To assemble

    1. Spread a generous tablespoon of kimchi mayo onto the bottom bun.

    2. Layer with lettuce leaves, tomato slices, and one of the cheesy burger patties.

    3. Add another spoonful of kimchi mayo, top with the second patty, more kimchi mayo, and top bun.
