Ingredients
Melt 1 tbsp butter in a small saucepan over medium heat, stir in the flour, and cook for 1 minute.
Gradually whisk in the milk until smooth, then simmer until thickened, 2–3 minutes.
Season with salt and white pepper, then remove from heat.
Spread Dijon mustard on both slices of white sandwich bread.
Layer one slice of bread with a slice of Swiss cheese, the ham, and another slice of Swiss cheese, then top with the second slice of bread.
Melt 1 tbsp butter in a skillet over low heat and toast the sandwich on both sides until golden brown, 2–3 minutes per side.
Spoon the béchamel sauce liberally over the top of the sandwich.
Top with the grated Gruyère cheese.
Place under a hot oven grill (broiler) until the cheese on top is melted, bubbly, and golden brown, 2–3 minutes.
