Cast-Iron T-Bone Steak

Ingredients

  • 1 thick-cut T-bone steak (about 1 1/2 lb / 700 g), dry-brined with salt
  • Flaky sea salt

Method

  1. Preheat the pizza oven to 925°F (500°C) with a cast-iron skillet inside until smoking hot.

  2. Pat the steak thoroughly dry with paper towels.

  3. Place the steak fat-cap down in the dry skillet to render the fat, about 2 minutes.

  4. Lay the steak flat in the rendered fat and roast in the pizza oven, flipping every 1–2 minutes, until an internal temperature of 120°F (49°C) is reached for medium-rare.

  5. Transfer the steak to a wire rack set over a tray, pour the hot fat from the skillet over it, and leave to rest.

    Then 10 min of waiting

  6. Return the steak to the blazing hot skillet for 30 seconds to flash-heat the exterior before carving.

  7. Slice the steak away from the bone, carve into thick slices, and season with flaky sea salt.
