15-Minute Chili Garlic Shrimp Noodles

Ingredients

For the sauce

  • 3 tbsp Korean chili pepper flakes (gochugaru)
  • 1 tbsp sugar
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp mirin
  • 1 tsp Korean chili paste (gochujang)
  • Black pepper, to taste
  • Small pinch of MSG (optional)

For the stir-fry

  • 3 tbsp neutral-tasting oil
  • 2 green onions, white parts sliced
  • 10-15 garlic cloves, minced
  • 1/2 tsp (2 g) fresh ginger, minced
  • 10 raw shrimp, peeled and deveined
  • 2 packs udon noodles (or spaghetti, fettuccine, rice noodles)
  • 1 tbsp toasted sesame oil

For the garnish

  • Green onion tops, sliced
  • Generous pinch of toasted sesame seeds
  • Soft-boiled eggs (optional)

Method

For the sauce

  1. Whisk together the gochugaru, sugar, soy sauce, oyster sauce, mirin, gochujang, black pepper, and MSG in a measuring cup until smooth.

For the stir-fry

  1. Heat the neutral oil in a large pan or wok over medium-high heat.

  2. Add the white parts of the green onions, garlic, and ginger, and sauté until fragrant, about 1 minute.

  3. Add the shrimp and cook until almost done, about 2 minutes.

  4. Pour in the prepared sauce and add the udon noodles.

  5. Stir-fry until everything is thoroughly combined and coated in sauce, about 1 minute.

  6. Drizzle with toasted sesame oil and remove from the heat.

For the garnish

  1. Garnish with sliced green onion tops, toasted sesame seeds, and soft-boiled eggs if desired, and serve immediately.
