Beef Lo Mein

Ingredients

For the marinade

  • 300 g beef flank steak, thinly sliced (10.5 oz)
  • 1/2 tbsp soy sauce
  • 1/4 tsp white pepper
  • Small pinch of sugar
  • 1/4 tsp baking soda
  • 1 tbsp Shaoxing wine
  • 1/2 tbsp cornstarch
  • 1 tbsp neutral oil

For the lo mein sauce

  • 120 ml water (1/2 cup)
  • 1/2 tbsp chicken bouillon powder
  • 2 tbsp soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 1 tsp sugar
  • 1 tbsp Shaoxing wine
  • 1/4 tsp white pepper
  • 1 tbsp cornstarch
  • Small pinch of MSG

For the lo mein

  • 2 tbsp neutral oil, divided
  • 3 cloves garlic, minced
  • 1 tsp grated ginger (4 g)
  • 60 g carrot, cut into matchsticks (1/3 carrot)
  • 1/2 yellow onion, sliced
  • 2 baby bok choy, chopped
  • 70 g red bell pepper, sliced (1/3 pepper)
  • 2 green onions, cut into 2-inch pieces
  • 460 g fresh egg noodles, cooked and drained (1 lb)
  • 1 tsp toasted sesame oil

Method

For the marinade

  1. Marinate the beef with soy sauce, white pepper, sugar, baking soda, Shaoxing wine, cornstarch, and oil.

For the lo mein sauce

  1. Whisk together water, chicken bouillon powder, soy sauce, dark soy sauce, oyster sauce, sugar, Shaoxing wine, white pepper, cornstarch, and MSG.

For the lo mein

  1. Heat 1 tbsp oil in a wok or large pan over high heat.

  2. Add the beef and sear for 2 minutes.

  3. Set the beef aside.

  4. In the same wok, throw in the minced garlic and ginger, and sauté for 30 seconds.

  5. Toss in the carrot, onion, bok choy, bell pepper, and green onions, and stir-fry for 1 minute.

  6. Add the cooked noodles, beef, and prepared lo mein sauce.

  7. Toss together until everything is nicely coated and glossy, about 1–2 minutes.

  8. Finish with toasted sesame oil and give it a final mix.
