Ingredients

For the ground pork marinade

  • 350 g ground pork (12 oz)
  • 1 tbsp soy sauce
  • 1 pinch sugar
  • Kosher salt
  • Black pepper
  • 1 tbsp Shaoxing wine

For the sauce

  • 1.5 tbsp soy sauce
  • 1/2 tsp dark soy sauce
  • 2 tbsp sesame paste
  • 1/2 tbsp chicken bouillon powder
  • 1 tbsp Chinese black vinegar
  • 1 tsp sugar
  • 1 tsp finely ground Sichuan peppercorns
  • 2 tbsp chili oil
  • 1 pinch MSG

For cooking and assembly

  • 1 tbsp neutral-tasting oil
  • 2–3 green onions, white parts sliced for cooking, green parts reserved for serving
  • 3 cloves garlic, minced
  • 1 tsp grated ginger
  • 1/4 cup preserved mustard greens (yacai)
  • 2 servings Chinese wheat noodles
  • 2 baby bok choy
  • Chili oil, for serving

Method

For the ground pork marinade

  1. In a medium bowl, combine the ground pork, soy sauce, sugar, kosher salt, black pepper, and Shaoxing wine.

For the sauce

  1. In a measuring cup or small bowl, whisk together the soy sauce, dark soy sauce, sesame paste, chicken bouillon powder, Chinese black vinegar, sugar, ground Sichuan peppercorns, chili oil, and MSG until combined.

For cooking and assembly

  1. Heat the oil in a pan over medium-high heat, add the marinated pork, and break it up with a spatula until no longer pink, 3–4 minutes.

  2. Add the white parts of the green onions, garlic, ginger, and preserved mustard greens to the pan, and sauté until fragrant, about 3 minutes.

  3. Cook the Chinese wheat noodles and baby bok choy in a large pot of boiling water according to the noodle package instructions, then drain, reserving a splash of the noodle cooking water.

  4. In serving bowls, mix the sauce with a splash of the saved noodle cooking water.

  5. Add the cooked noodles to the bowls, then top with the cooked pork mixture, boiled baby bok choy, reserved sliced green onion tops, and extra chili oil.
