Korean-Style Soy Sauce Chicken Wings

Ingredients

For the sauce

  • 2.5 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sugar
  • 2 tbsp oyster sauce
  • 1 tbsp mirin
  • 1/2 tbsp chicken bouillon powder
  • 1/4 cup water
  • 1 dried chili

For the chicken

  • 1.3 lb chicken wings
  • Kosher salt
  • Black pepper
  • 1/4 cup cornstarch
  • 3 tbsp neutral-tasting oil

To combine

    For cooking and garnish

    • 5 cloves garlic, minced
    • 1–2 green onions, chopped, white and green parts separated
    • 1/2 tsp ginger, minced
    • 10 shishito peppers
    • Generous pinch of toasted sesame seeds
    • 1 mild red chili, sliced (optional)

    Method

    For the sauce

    1. Whisk together the soy sauce, honey, sugar, oyster sauce, mirin, chicken bouillon powder, water, and dried chili in a measuring jug or bowl.

    For the chicken

    1. Season the chicken wings on all sides with salt and pepper.

    2. Lightly coat the chicken wings with the cornstarch.

    3. Heat the oil in a large skillet or pan over medium heat.

    4. Add the chicken wings and cook, turning occasionally, until golden brown and cooked through, about 8 minutes.

    5. Remove the cooked wings from the pan and set them aside on a wire rack or plate.

    To combine

    1. In the same pan, add the minced garlic, the white parts of the green onions, and the minced ginger.

    2. Sauté the aromatics over medium heat until fragrant, about 1 minute.

    3. Pour in the prepared sauce mixture and bring it to a simmer until it gets nice and glossy, 1–2 minutes.

    4. Slide the wings back into the pan and toss everything together to coat the wings in the sauce, about 2 minutes.

    5. Add the shishito peppers to the pan and toss with the wings and sauce for 1 minute until tender-crisp.

    6. Transfer to a serving plate and garnish with the green parts of the green onions, toasted sesame seeds, and sliced red chili if using.
