Crispy Garlic Butter Potato Pops

Ingredients

For the potato pops

  • 4 medium potatoes, peeled and chopped into bite-sized pieces
  • Water, for boiling
  • Salt
  • 1 tbsp cornstarch
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp black pepper

For the garlic butter toss

  • 2 tbsp butter
  • 3 cloves garlic, finely minced
  • 1 tbsp fresh parsley, chopped

Method

For the potato pops

  1. Place the chopped potatoes in a pot, cover with cold water, add salt, and bring to a boil.

  2. Boil the potatoes until fork-tender, 10–12 minutes.

  3. Drain the potatoes and transfer them to a bowl.

  4. Add the salt, cornstarch, garlic powder, paprika, and black pepper.

  5. Mash the seasoned potatoes until smooth.

  6. Shape the mashed potato mixture into small bite-sized balls.

  7. Place the potato balls into the air fryer basket and air fry at 400°F (200°C) until golden brown and crispy, 12–15 minutes, shaking halfway through.

For the garlic butter toss

  1. Melt the butter in a pan over medium heat, then add the minced garlic and chopped parsley.

  2. Add the fried potato pops to the pan and toss until evenly coated in the garlic butter.
